I haven't used Voice in a while and can't find my current phone number

I'd actually like to change my number to one that I port in, but all I see is the option to Link a Number, which doesn't sound like the same thing at all.

This is the "new way" to port in a cell number to your Google Voice account.  You must have a Google number already on your account, then you'll see the option to port in a cell telephone number.

If your old Google number were available to you, you'd have seen an offer to restore it to your account.  Now you'll have to select any available number from the pool of available numbers.

You'll need a cell telephone (that has never been used to select any Google number) to select and verify your new number.

Once you get an available number, you'll see a new free offer you might not have expected.  You can keep your Google number as a second Google number in addition to the cell number you're porting in.  In the past you had to pay an additional $20 to keep the existing Google number past a 90 day waiting period.  Now keeping the number is free, but you have to click to keep it before the passage of 90 days or Google will remove it.

Thank you for your quick response. What's strange is, it doesn't look like Google Voice is giving me ANY of the options above. I think I had a number set up at some point, and for reasons I don't remember, I must have canceled the service, because as you mentioned, it's not showing a current number. 

However, it's also not showing me the option to restore a number, to select a number, or to port in a number. It's showing me I can LINK to a number, but that looks more like call forwarding. 

Am I looking in the wrong place?
