I have created a survey of 100 respondents for ages 18 to 60+. But the point is, I would like the survey to be shown only to respondents over 30. is it possible to do this? If yes, tell me how? Thanks in advance.

Welcome to the Google Surveys community.

If that is not a targetting option that is listed, then you cannot choose it, no.

You can use a screening question though.
